A triumphant entry of the generous froth in the glass is the presentation of this wine that already demonstrates its uncommon richness with its appearance. The vivid purple colour is very rich with pigments. Even the fragrance remains vigorous and intense with loquats and wild blackberries. Full flavoured and tonic, with a high-impact.

CHARACTERISTICS

Fields: Lands in the northern area of the province of Reggio Emilia, located in the municipalities of Gualtieri, Boretto e Novellara.
Grapes: Lambrusco: Salamino, Maestri, Ancellotta. Hand picked from 10 September to 10 October.
Colour: intense ruby red, with a persistent garnet red froth
Fragrance: intensely vigorous, persistent, ample bouquet, characteristic.
Taste: dry, balanced, excellent density, rightly tannic and rightly tart.
Vinification: Red wine vinification with prolonged maceration. Secondary fermentation in autoclave with the classic Charmat Process.
Alcohol content: 11% vol
Gastronomic combination: Zampone (pig’s trotter stuffed with seasoned mincemeat) cotechino (kind of spiced Italian sausage) and cappello del prete (type of meat) accompanied by lentils, mashed potatoes and game.
